Did you know that…

The acidity of an oil cannot be tasted, but can only be measured in a laboratory. It’s the percentage of free fatty acids present: the higher it is, the poorer the quality of the oil. To be truly extra virgin, olive oil must have very low acidity, always between 0 and 0.8%.
